Ground Turkey Chop Suey

At one point, I decided to try to eat gluten-free, dairy free, and sugar free.  It lasted about 1 week, but I did discover some of my favorite recipes.  Dinner was always the meal I would struggle with because dairy is in almost everything.  A lot of recipes call for milk, sour cream, Greek yogurt, or cheese.  Heck, I used to put cheese on almost everything I cooked.  Eliminating gluten was easier because I did go gluten-free for a little over a year at one time.  So, for anyone out there with food allergies or looking to really clean up your eating habits, this is a GREAT recipe to try.

First, pre-wash all the vegetables.  Then, cut the celery, sweet pepper, and carrots into strips and the onion into wedges.

Next, add oil and vegetables to a large pan and begin to cook through.  Once the vegetables are beginning to brown a little, add garlic and cook for another 2 minutes.  Then, set the vegetables aside.

Brown the meat and drain.

Next, add salt, pepper, and the vegetables to the meat.  Combine the cornstarch, water, and soy sauce mixture and cook until thickened.

I always cook my brown rice separate and then add to the mixture.    I let it heat together for a couple minutes and then serve.  You will be amazed how delicious this dish is!!

Instructions
  1. Heat olive oil over medium-high heat in a large skillet. Add celery, onion, sweet pepper, and carrots and cook until lightly browned but still crisp. Add garlic and cook for 2 minutes. Remove vegetables from skillet.
  2. Meanwhile, boil water in a separate pan and add rice. Cook according to directions.
  3. Add ground turkey to skillet and cook through, leaving the meat in chunks. Drain if needed.
  4. Add salt, pepper and vegetables back to the skillet and mix.
  5. Combine the cornstarch, water and soy sauce in a separate bowl and whisk until completely mixed. Add to the meat mixture. Cook and stir until the sauce thickens.
  6. Add rice to the mixture and heat through for about 2 minutes. Serve and Enjoy!
